Depends on the tank, If I have a lot of fry in a tank, water changes get done daily, But usually I do water changes on all other tanks twice a week.

same here, twice a week usually. but if i see any problems like cloudy water starting i leave it for approx 2 weeks b4 i do a WC.

Is that because u have high phosphates and or nitrate in your tap water?

nitrates only run at 5 and p04 cant remember but very low from the tap. i still havnt found out all thats in the tap to be honest as i still cant add anything or BANG with GW etc. what happens is if i do to many the water goes cloudy so i have to leave it to settle down. i really need to do a water stat check to see how its running. but all seems to be ok so i just do what i know works. although saying that the last few weeks with the breeding session i left the tank to long and some of the leaves have now gotten holes in them, so i hae to do a WC tomorrow and also reset the fry tank ready so will see how it goes.

Have u tried looking for your water stats online from your local water authority. I have been able too see mines from the Scottish water authority website. I'm pretty sure they have to make them available to anyone who wants to see them. So most authorities post them on their sites. Failing that u could send a letter asking for them.
